One of my favorite things to do in my spare time is cook. While I was doing my grocery shopping a few weeks ago I found this recipe for Gluten Free Oatmeal Cookies. I love Oatmeal Cookies (and really anything that has sugar in it) and the thought of a healthier version of them was even better! It turns out that my ignorance for what Gluten free means probably added more calories than making the standard Oatmeal Cookie. None the less, these cookies were delicious so I thought I’d share the recipe with you.

Here are the ingredients:
1/4 Cup of butter (I always use unsalted when baking)
1 1/4 Tsp of baking soda
3/4 Cup of sugar
3 Cups of Trader Joe’s Rolled Oats (gluten free, wheat free & dairy free)
3/4 Cup of brown sugar
6 oz of chocolate chips
2 Eggs
1 Tsp of Vanilla
1 Cup of peanut butter (Trader Joe’s peanut butter is really creamy and works really well for baking)

In a large bowl combine sugar, brown sugar and butter and beat until creamy. Then add eggs, vanilla, and baking soda and mix well.
Add peanut butter and mix. Stir in oats and chocolate chips.
Place Tsp full of dough on a lightly greased cookie sheet about 2 inches apart. I use wax paper because I think it’s healthier and I hate scrubbing cookie sheets.
Preheat oven to 350F and bake cookies for 10-12 minutes. I ended up baking each sheet for 15 minutes.
The final product! The recipe makes about 48 cookies.
